PEABODY, MA – The Skinny Pancake announced the opening of their first mall location at Northshore Mall, the premier shopping and dining destination serving the coastal communities north of Boston.

This new location is expected to open in mid-March and will be serving up The Skinny Pancake’s signature four-meal-a-day, seven days a week concept: breakfast, lunch, dinner, and dessert—alongside craft beers, brunch cocktails, espresso drinks, and milkshakes—all within a fast-casual and comfort-focused atmosphere.

The Skinny Pancake was founded as a street cart in Burlington, VT in 2003. It has maintained steady, organic growth ever since. The decision to expand to Northshore Mall comes as the mall itself has undergone a transformation, welcoming many new top-tier dining and retail brands. With a large patio, a run of glass garage doors, exclusive exterior entrance, and an interior entrance right off the food court, this new Skinny Pancake space will stand out for its unique features.

Additionally, shoppers can watch The Skinny Pancake’s famous crepes being made in real time thanks to a large window accessible to the food court. This dynamic space will show off what The Skinny Pancake does best: creating fun and affordable food with local, organic, and healthy ingredients.

“We’ve had our sights set on Boston for years, but entering this market is no small feat,” said Benjy Adler, CEO and Founder of The Skinny Pancake. “Northshore Mall provides us with a prime, destination location where we can stand out. Once we establish ourselves here, we look forward to expanding further across the region.”

With the opening of the Peabody location, The Skinny Pancake expects to increase the amount of locally sourced ingredients they purchase not just from Vermont farms and food producers such as Maplebrook Farms and Cabot, but also from New Hampshire, Massachusetts, and Maine seacoasts. With this decision, The Skinny Pancake demonstrates its ability to scale while reaffirming its commitment to supporting local farms and food producers and thereby the communities in which they operate.

“We are excited to welcome The Skinny Pancake to Northshore Mall,” said Alexandra Meadus-Pitcher, Director of Marketing at Northshore Mall. “As a growing small business that prioritizes supporting local economies, this restaurant brings a distinctive and dynamic offering to our diverse range of retailers and dining options. We’re honored to be part of their expansion and to provide our shoppers with even more variety and local flavor in their dining choices.”
